Peak Light Red Kidney Beans, primarily grown in Minnesota, are so named because of their shape. They are thought to have originated in Peru about 8,000 years ago and spread by migrating tribes.
Kidney beans have a full flavor, soft texture and hold their shape during cooking, which makes them popular in chili, Caribbean red beans and rice as well as many Indian dishes.
